Mexican Lasagna
- 1 lb. ground beef
- 1/2 chopped onion
- 1 (10 1/2 oz.) can pizza sauce
- 1/4 c. sliced black olives
- 1/2 tsp. salt
- 1/4 tsp. crushed dried oregano
- 1 beaten egg
- 1 c. shredded Cheddar cheese
- 1 c. cream-style cottage cheese
- 4 c. tortilla chips
- Brown ground beef and onion. Drain.
- Stir in pizza sauce, olives, salt, oregano and dash of pepper.
- Cook, covered, 30 minutes.
- In a bowl, combine egg and cheeses.
- Set aside 8 whole tortilla chips. Slightly crush remaining chips.
- Spread 1/3 meat mixture in a 13 x 9-inch dish. Top with 1/2 cheese mixture and 1/2 crushed chips. Repeat layers, ending with meat. Bake at 350u0b0 for 40 minutes. Top with whole tortilla chips and more cheese if desired.
