Pork Chop Bundles Recipe
- 1 pork chop
- 1 carrot
- 1 sm. onion
- 1/2 green pepper
- 1/4 c. regular long grain rice
- 1/2 teaspoon salt
- 3/4 c. tomato juice
- From heavy-duty foil, cut a 12-inch square; grease.
- Cut carrot crosswise in half, then lengthwise.
- Slice onion, cut green pepper into 1/4 inch strips.
- In center of foil, place uncooked rice with pork chop on top.
- Fold up sides of foil and top with carrots, onion, and green pepper; sprinkle with salt.
- Pour tomato juice over all.
- Seal foil bundles and bake for 1 1/2 hour at 350 degrees.
- Makes 1 main serving.
