Minty Chocolate Truffles
- 12 ounces milk chocolate chips
- 14 cup egg substitute
- 14 cup butter or 14 cup margarine, cut in pieces
- 2 tablespoons butter or 2 tablespoons margarine, cut in pieces
- 14 cup sifted powdered sugar
- 2 tablespoons sifted powdered sugar
- 12 teaspoon mint extract
- 12 ounces chocolate, flavored candy bark
- 2 ounces white vanilla, flavored candy bark
- line a cookie sheet with wax paper.
- set aside.
- melt chocolate chips in top of a double boiler.
- beat egg substitute 1 minute with an electric mixer.
- gradually add the melted chocolate, stirring constantly.
- add the butter, sifted powder sugar, and mint extract.
- beat at medium speed with an electric mixer until the mixture is smooth.
- cover and chill in the refrigerator for 1 hour.
- shape mixture into 1 inch balls, cover and chill in the refrigerator until firm.
- melt chocolate candy coatings in top of the double boiler.
- using a dipping spoon, dip each ball into bark letting excess drip off.
- ploace on the prepared pan and chill until coatings harden.
- drizzle truffles with melted white vanilla bark.
