Garlic and Herb Marinade
- 10 -15 garlic cloves, crushed
- 14 cup parsley, chopped
- 4 sprigs rosemary, leaves removed, chopped
- 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme
- 12 lemon, juice and zest
- 1 teaspoon anchovy paste
- 1 teaspoon Dijon mustard
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 14 cup red wine vinegar
- 12 cup olive oil
- Mix together first 8 ingredients.
- Add olive oil.
- (Pulse in a food processor or blender if available but leave garlic and rosemary "chunky" so pieces of it stick to the meat while grilling.

- Add meat and marinate several hours up to overnight.
