Gluten Free Pancake / Waffle Mix
- 1 cup brown rice flour
- 3 tablespoons tapioca starch
- 13 cup potato starch
- 2 teaspoons white sugar
- 1 12 teaspoons baking powder (gluten-free)
- 12 teaspoon baking soda
- 12 teaspoon salt
- 12 teaspoon guar gum
- 2 eggs (I use extra large)
- 3 tablespoons canola oil
- 1 cup almond milk (minus 1 tbsp)
- 1 tablespoon lemon juice
- 1 cup water
- 1.
- Mix all dry ingredients together.

- Add wet ingredients and stir well.
- 3.
- Mix will seem watery in consistency, but the recipe makes really fluffy waffles.
