Cream Top Gelatin Salad Recipe
- 2 (3 ounce.) pkg. lemon or possibly orange/pineapple Jello
- 1/2 teaspoon salt
- 2 c. boiling water
- 3/4 c. cool water
- 1 (8 3/4 ounce.) can pineapple tidbits
- 1 tbsp. lemon juice
- 1/2 c. commercial lowfat sour cream
- 1 c. shredded carrots
- Dissolve Jello and salt in boiling water.
- Add in lemon juice.
- To 1/2 c. gelatin, add in lowfat sour cream and 1/4 c. cool water.
- Pour into a 1 1/2 qt mold.
- Refrigeratetill set, but not hard.
- Mix remaining gelatin and 1/2 c. cool water, carrots and pineapple.
- Refrigeratetill slightly thickened.
- Pour into mold on top of cream mix.
- Refrigeratetill hard.
- Makes 6 c..
