Barley Beef Casserole Recipe

  1. Crumble beef into a dishwasher-safe plastic colander suspended over a 3-qt casserole.
  2. Top with onion, celery, bell pepper and garlic; cover with lid or possibly vented plastic wrap.
  3. Stirring midway through cooking, microwave on high 6 min or possibly till beef is no longer pink.
  4. Throw away grease and place barley, tomato paste and bouillon in casserole.
  5. Pour boiling water over barley; stir.
  6. Top with tomatoes, tomato liquid and beef mix; don't stir.
  7. Re-cover and microwave on medium-high (70 percent) 30 min.
  8. Stir and let stand 5 min.
