Top Secret Maple Muffins
- 2 12 cups flour
- 1 tablespoon baking powder
- 12 teaspoon salt
- 1 14 cups sugar
- 14 cup maple syrup
- 12 cup home-made applesauce (this is the secret part)
- 12 grapeseed oil (canola oil is fine too)
- 2 eggs
- 12 cup vanilla yogurt
- 12 cup sour milk or 12 cup buttermilk
- 2 cups chopped ripened peeled pears
- 1 cup pecan pieces
- Preheat the oven to 350 degrees fahrenheit, and spray a jumbo muffin pan with non-stick cooking oil.
- Whisk all wet ingredients together : the maple syrup, eggs, sugar, applesauce, yogurt, and sour milk.
- Stir in the pears and pecan pieces.
- In a separate bowl, whisk together the dry ingredients : flour, salt, and baking powder.
- Fold the dry ingredients into the wet ingredients carefully, until just mixed.
- Scoop into a dozen muffins (they will be huge in a regular pan but I got away with it).
- Bake on centre rack, rotating every 15 minutes, for around 30-50 minutes, depending on what pan size you're using.
- Wait 5-10 minutes before removing or they'll crumble!
- Enjoy!
- You now have a muffin that tastes and feels like a delicious pancake!
