Mae's Potato Soup
- 6 medium russet potatoes, peeled & cubed
- 1 bunch green onions, chopped, save green part for garnish
- 1 water reseved from cooking potatoes
- 1 quart milk
- 1 quart half &half
- 1/4 butter
- 1/4 cup sour cream
- 5 oz shredded cheese
- 1 packages bacon, cooked & crumbled
- cook potatoes and onions until tender
- drain reserving water
- add butter and sour cream to potatoes, stir
- add milk and half&half and enough reserved liquid to cover top of potatoes
- simmer until thick and lumpy, stirring occasionally
- add half of bacon, stir
- serve with crackers or garlic bread.
- garnish with remaining bacon, green tops, and cheese.
