Italian Sausages With Peppers & Onions
- 8 links Italian sausages (Spicy or Mild or Both, as desired)
- 6 medium sweet bell peppers, cut into slices (just green is fine, but try using a mix of colors)
- 1 large sweet onion, sliced thin
- 2 garlic cloves, finely minced
- 3 tablespoons olive oil
- salt, to taste
- fresh ground pepper, to taste
- 14 cup chopped fresh Italian parsley (flat parsley)
- In a large, heavy frying pan,over medium-high heat, brown the sausages in the olive oil well on all sides.
- Add the onions, and cook until they begin to take on color.
- Add the peppers and garlic, and continue cooking until the peppers are tender, but not mushy, and the sausages are cooked through, about 20 to 25 minutes or so.
- Remove from heat.
- Season with salt and pepper, as desired.
- Mix in the fresh parsley.
- Serve!
