Toasted Sourdough Pimento Triangles
- 12 slices Sourdough Bread
- 1 package (8 Oz. Size) Cream Cheese, Softened
- 1/4 cups Monterey Jack Pepper Cheese Shredded
- 13 cups Sour Cream
- 3 Tablespoons Mayonnaise
- 1 Tablespoon Black Pepper
- 1 jar (4 Oz. Size) Pimentos, Drained
- 3 stalks Scallions, Cut Into Small Pieces On The Bias, For Garnish
- Preheat oven to 400 degrees F. You will need two 9 x 12 nonstick baking sheet pans, or liberally coat regular sheet pans with your favorite cooking spray.
- Cut ends off each slice of bread.
- Cut each slice of bread into triangles.
- In a mixing bowl, add softened cream cheese, pepper jack cheese, sour cream, mayonnaise and stir well to incorporate ingredients.
- Add black pepper and pimentos (you can chop pimentos if desired).
- Using a spatula, combine well.
- Using a small offset spatula, spread mixture on each triangle of sourdough bread.
- Place on baking sheet pan.
- You may have to bake these in batches.
- Place in the oven and bake 4 minutes.
- Transfer to a serving platter.
- Repeat until all sourdough bread triangles are done.
- Add a small scallion or two on top of each baked pimento triangle for garnish.
- Enjoy!
