Toasted Sourdough Pimento Triangles

  1. Preheat oven to 400 degrees F. You will need two 9 x 12 nonstick baking sheet pans, or liberally coat regular sheet pans with your favorite cooking spray.
  2. Cut ends off each slice of bread.
  3. Cut each slice of bread into triangles.
  4. In a mixing bowl, add softened cream cheese, pepper jack cheese, sour cream, mayonnaise and stir well to incorporate ingredients.
  5. Add black pepper and pimentos (you can chop pimentos if desired).
  6. Using a spatula, combine well.
  7. Using a small offset spatula, spread mixture on each triangle of sourdough bread.
  8. Place on baking sheet pan.
  9. You may have to bake these in batches.
  10. Place in the oven and bake 4 minutes.
  11. Transfer to a serving platter.
  12. Repeat until all sourdough bread triangles are done.
  13. Add a small scallion or two on top of each baked pimento triangle for garnish.
  14. Enjoy!
