Turnip Mousseline Recipe
- 5 med. carrots, peeled & sliced thin
- 4 med. yellow turnips, pared & diced
- 1/2 teaspoon salt
- 1/2 c. hot lowfat milk
- 1 tbsp. butter, melted
- 1/2 teaspoon grnd nutmeg
- Place carrots and turnips in a large saucepan.
- Add in sufficient water to cover, and add in salt.
- Cover and bring to a boil.
- Reduce heat and simmer till vegetables are tender, about 12 min.
- Drain.
- Place vegetables in a mixer bowl.
- Beat with an electric mixer or possibly in a food processor till smooth.
- Gradually beat in lowfat milk, butter and nutmeg.
- Serves 4.
