Smashed Potatoes (America's Test Kitchen)

  1. cover potatoes w/ 1" water.
  2. add 1 tsp salt.
  3. add 1 bay leef.
  4. bring to boil.
  5. cook to fork tender.
  6. extract 1C cooking water.
  7. drain potatoes.
  8. extract bay leaf.
  9. put potatoes in pot (to dry off).
  10. smash potatoe (use flat side of spatula or spoon to "squish").
  11. mix add 4 tbsp melted butter.
  12. add 4oz cream cheese.
  13. mix.
  14. salt pepper.
  15. add 1/4 C cooking water (or until desired consistency).
  16. sprinkle a bit of chive.
  17. add mixture to pot.
  18. fold.
