Ham and Cheese Brunch Squares

  1. Preheat over to 450 degrees.
  2. Lightly brush a 9x13 pan with oil.
  3. Crumble hash browns over pan, press gently into an even layer.
  4. Sprinkle half of the cheese evenly over hash browns.
  5. Bake 13-15 minutes or until crust starts to brown and cheese is melted.
  6. In large mixing bowl whisk cream cheese until smooth.
  7. Gradually add eggs and black pepper; whisk until smooth.
  8. Add ham (or your cooked sausage or bacon) and 3/4 cup of the green onions to the egg mixture.
  9. When the crust is done pour egg mixture over crust.
  10. Return pan to oven and bake 6-8 minutes or until center is set (I had to bake mine 20 minutes).
  11. Slice tomatoes in half lengthwise and scrape out seeds and dice.
  12. Remove pan from oven and top with remaining cheese, tomatoes, and 1/4 cup green onions.
  13. Sprinkle with additional black pepper, if desired.
  14. Cut into squares and serve.
