Balsamic Green Beans with Caramelized Almonds

  1. Place 3 cups ice cubes in large bowl; fill with cold water.
  2. Set aside.
  3. Heat 6 quarts water in 8-quart saucepan until water comes to a full boil: add green beans.
  4. Continue cooking 3-4 minutes or until beans turn bright green and are crisply tender.
  5. Do not over cook.
  6. Drain.
  7. Immediately place green beans into ice water; let stand until cool.
  8. Drain well; pat dry.
  9. Place into large bowl; add bell pepper and cheese.
  10. Set aside.
  11. Combine all dressing ingredients in container with tight-fitting lid; shake until well mixed.
  12. Pour over bean mixture.
  13. Cover; refrigerate, stirring every hour, for at least 3 hours.
  14. Place almonds, butter and sugar in 8-inch nonstick skillet.
  15. Cook, stirring constantly, over medium-low heat until almonds are golden and caramelized.
  16. Immediately remove from heat; spread onto waxed paper to cool.
  17. Place green bean mixture into serving bowl; sprinkle with almonds.
