Scallop And Shrimp On Skewers

  1. Pat scallops and shrimp dry.
  2. Combine olive oil, lemon juice, garlic, parsley, basil and black pepper to make a marinade.
  3. Add shellfish and marinate 30 minutes to 1 hour, stirring occasionally.
  4. Alternate scallops, shrimp and mushrooms on skewers without crowding.
  5. Brush with marinade.
  6. Broil or grill 4 inches from heat source for 4 minutes.
  7. Turn skewers, brush with marinade and continue to cook about 3 minutes more or until scallops and shrimp are opaque.
  8. Do not overcook.
  9. Serve with rice pilaf, if desired.
  10. Makes 4 servings.
