Double-Dipped Caramels

  1. Unwrap the caramels and place a toothpick in the center of each one.
  2. Heat candy coating in a heavy medium saucepan over low heat, stirring constantly just until melted.
  3. Remove from heat.
  4. Place nuts or brickle pieces in a bowl.
  5. Dip one caramel into coating; turn to coat.
  6. Place dipped caramels in nuts, turning to coat.
  7. (Or, dip a caramel halfway into coating.
  8. Place dipped caramel into nuts, turning to coat.)
  9. Transfer caramel to a waxed-paper-lined baking sheet.
  10. Repeat with remaining caramels.
  11. Let stand 30 minutes or until firm.
  12. Store tightly covered up to 1 week.
