Galaxy Mousse
- 2 eggs, separated
- 1 c. milk
- 1 envelope unflavored gelatin
- 3/4 c. sugar, divided in 1/2 c. and 1/4 c.
- 1/4 c. unsweetened cocoa
- 1/4 c. instant malted milk powder
- 1/2 c. heavy cream, whipped
- 1/2 c. graham cracker crumbs
- 2 Tbsp. melted butter
- 1/3 c. caramel ice cream topping
- In small bowl, beat egg yolks with milk.
- In medium saucepan, combine gelatin with 1/2 cup sugar.
- Blend in milk mixture. Let stand 1 minute.
- Cook over low heat, stirring to dissolve gelatin (about 5 minutes).
- Whisk in cocoa and malted milk powder. Transfer to medium bowl and refrigerate about 35 minutes until mixture mounds when dropped from spoon.
- In mixer bowl, beat egg whites until soft peaks form.
- Gradually add remaining 1/4 cup sugar and beat until stiff peaks form.
- Fold into gelatin mixture, then fold in whipped cream.
- Spoon into an 8 1/2 x 4 1/2-inch loaf pan.
