Congo Squares

  1. Preheat oven to 350F
  2. Blend room temp oleo and brown sugar in a stand mixer
  3. Add eggs and beat until well incorporated.
  4. Add vanilla
  5. Add salt and baking powder
  6. Very slowly start to add flour a little bit at a time
  7. Add coconut
  8. Add 3/4 chocolate chips
  9. Grease a 9 x 13 metal baking pan
  10. Dump mixture into pan
  11. Grease hands and press mixture down to make it an even layer
  12. Sprinkle remaining chocolate chips across the top
  13. Sprinkle chopped pecans across the top
  14. Bake in oven for 25 minutes until light golden brown and a knife comes out clean
  15. Allow to cool completely before cutting
