Congo Squares
- 1 1/3 stick of Oleo
- 1 lb Light brown sugar
- 3 Eggs
- 1 1/3 stick of Oleo
- 2 tsp Vanilla
- 2 3/4 cup Plain flour
- 3 tsp Baking powder
- 1/2 tsp Salt
- 1 cup Coconut flakes (optional)
- 1 cup Chopped pecans (optional)
- 12 oz Semi sweet chocolate chips
- 1 cup Coconut flakes (optional)
- Preheat oven to 350F
- Blend room temp oleo and brown sugar in a stand mixer
- Add eggs and beat until well incorporated.
- Add vanilla
- Add salt and baking powder
- Very slowly start to add flour a little bit at a time
- Add coconut
- Add 3/4 chocolate chips
- Grease a 9 x 13 metal baking pan
- Dump mixture into pan
- Grease hands and press mixture down to make it an even layer
- Sprinkle remaining chocolate chips across the top
- Sprinkle chopped pecans across the top
- Bake in oven for 25 minutes until light golden brown and a knife comes out clean
- Allow to cool completely before cutting
