Chicken Fried Chicken

  1. Sprinkle chicken with salt and pepper.
  2. For breading, grind Chex cereal in a blender until crushed.
  3. Mix together with seasoned salt, fresh ground pepper, flour, baking powder, and ground red pepper.
  4. In another bowl, whisk together egg whites and milk.
  5. Dip chicken in the breading, then the egg mixture, then the breading again.
  6. Place in a glass baking dish barely coated with oil.
  7. Bake at 350 degrees for 10-15 minutes; turn over, then bake for another 10 minutes or until done.
