Chicken Fried Chicken
- 4 whole Thin Chicken Breasts
- 2 whole Egg Whites
- 3/4 cups Milk (or Milk Substitute)
- 2 Tablespoons Oil
- 4 cups Chex Cereal (corn Is Best)
- 1/2 teaspoons Seasoned Salt
- 1/2 teaspoons Fresh Ground Pepper
- 13 cups Flour
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Ground Red Pepper
- Sprinkle chicken with salt and pepper.
- For breading, grind Chex cereal in a blender until crushed.
- Mix together with seasoned salt, fresh ground pepper, flour, baking powder, and ground red pepper.
- In another bowl, whisk together egg whites and milk.
- Dip chicken in the breading, then the egg mixture, then the breading again.
- Place in a glass baking dish barely coated with oil.
- Bake at 350 degrees for 10-15 minutes; turn over, then bake for another 10 minutes or until done.
