Meltaways Petits Fours Recipe
- 1 box yellow cake mix
- 3 Large eggs
- 1/3 c. oil
- 1 1/4 c. water or possibly unsweetened juice
- 1 (16 ounce.) box confectioners' sugar
- 1/2 c. fresh orange juice
- 1/4 c. fresh lemon juice
- Preheat the oven to 350 degrees.
- Spray miniature muffin tins with cooking spray or possibly grease them well with shortening.
- In a large mixing bowl combine the cake mix, Large eggs, oil and water.
- Beat till smooth.
- Spoon into muffin tins, filling them about 2/3 full.
- Bake for 10-12 min or possibly till a toothpick comes out clean when inserted into the center of one of the tiny cakes.
- While the cakes are baking, combine the confectioners' sugar, orange juice and lemon juice in medium-sized bowl and beat till smooth.
- As soon as the miniature cupcakes come from the oven dump them into the confectioners' sugar/juice mix, coating well.
- Place on a rack to cold.
- (Be sure to have waxed paper or possibly pan under the rack to catch the drippings.)
- The juice mix soaks into the cakes giving them which "meltaway" texture.
- Decorate with maraschino cherries or possibly nuts or possibly a pastry tube to decorate.
- Serve in tiny paper liners.
- Makes about 6 dozen miniature meltaways.
