Sig's Cauliflower Cheese and Onion Bake
- 1 small head fresh cauliflower, leaves and stalk removed, broken into florets
- 1/2 onion, pealed and minced, or grated
- 2 tbsp unsalted butter
- 2 tbsp plain flour
- 1 cup large, fresh milk
- 75 grams each, red Leicester cheese , ( I use this to give the sauce a deep colour) and a mature strong cheese.
- 1 clove garlic , large, crushed
- 1/2 good vegetable stock cube
- 1/4 onion , sliced finely for serving
- First clean your cauliflower and prepare ready for boiling.
- Put cauliflower in pot just cover with water and boil gently until it is almost cooked.
- Whilst the cauliflower is boiling make the cheese and onion sauce .
- Very finely grate or puree the peeled onion
- Heat the butter in a pan, add the pureed onions and the crushed garlic simmer until soft.
- Do not fry or let them go brown
- Add the flour and stir thoroughly until a ball forms
- Add the milk constantly stirring until you get the consistency you wish for the sauce to have.
- Then stir in the broken up cheese and stock cube .Stir until thick and creamy
- Put the well drained, cooked cauliflower into a oven proof dish.
- Pour over the sauce , filling the gaps.
- Bake under a hot grill until golden brown .
- Serve with the fried 1/4 onion
