Paul Blair's Stuffed Peppers
- 3 green bell peppers, sliced lenthwise and scraped out
- 20 ounces ground chicken
- 1 egg
- 1 cup Italian breadcrumbs
- 0.5 (1 ounce) package dry onion soup mix
- 3 tablespoons diced garlic
- fresh ground pepper
- 6 tablespoons mozzarella cheese, shredded
- 1 tomatoes, sliced
- Mix together chicken, egg, breadcrumbs, soup mix, garlic and pepper.
- Divide into 6 even amounts, and stuff into bell pepper halves.
- Bake for 40 minutes at 325 degrees.
- Sprinkle with cheese and top with tomato.
- Bake an additional 10 minutes.
- Can be reheated in the microwave at lunchtime on High for 90 seconds.
