Confetti Corn Muffins
- 2 pkg. (8-1/2 oz. each) corn muffin mix
- 1/4 tsp. ground red pepper
- 1 can (11 oz.) whole kernel corn, drained
- 1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
- 1/4 cup milk
- 2 eggs
- 2 green onions, sliced
- 1 medium red bell pepper, finely chopped Target 1 pkg For $2.99 thru 02/06
- Mix muffin mixes and ground red pepper in small bowl; set aside.
- Mix remaining ingredients in large bowl.
- Add muffin mixture to corn mixture; mix well.
- Spoon batter into paper-lined muffin pan, using 1/4-cup measure.
- Bake at 400F for 25 minutes or until golden brown.
