Smokey Potato Soup
- 3 medium potatoes, peeled and chopped (3 cups)
- 1 large onion, chopped (1 cup)
- 1 medium carrot, chopped (1/2 cup)
- 12 cup celery, chopped
- 1 cup canned corn
- 4 cups milk
- 2 teaspoons salt
- 14 teaspoon pepper
- 1 cup low-fat sour cream
- 2 tablespoons flour
- 2 teaspoons paprika (I like more)
- 12 teaspoon liquid smoke
- cooked bacon or ham, chopped
- Boil potatoes, carrots, celery and onions in large covered pot of water, until tender (about 20 minutes).
- Drain water, return vegetables to pot.
- Stir in milk, salt and pepper and bring mixture to a boil.
- In a large bowl or pot, stir together sour cream, flour and paprika.
- Remove 1 cup of hot liquid from vegetable pot and gradually stir it into the sour cream mixture, until creamy.
- Slowly pour sour cream mixture into the pot.
- Cook on medium heat until bubbling
- Stir in liquid smoke, then add corn.
- Mix in option bacon if desired.
