Auntie's Broccoli Cornbread
- 1 (8 ounce) box Jiffy cornbread mix
- 1 cup cottage cheese
- 10 ounces frozen chopped broccoli (thawed & drained)
- 12 teaspoon salt
- 3 eggs (beaten)
- 12 cup butter (melted)
- 12 cup onion (chopped)
- 12 cup cheese (shredded) (optional)
- Set out box of frozen broccoli to thaw.
- Drain broccoli and remove any excess water with paper towels.
- Combine ingredients together adding Jiffy cornbread mix last.
- Pour into greased 8 1/2 x 11 pan.
- Bake at 400 for 30 minutes or until toothpick inserted into middle comes out clean.
