Mini Philly Christmas Puddings
- 125g block PHILADELPHIA Cream Cheese, softened
- 3/4 cup brown sugar
- 2 eggs
- 1/2 cup fruit mince Whole Foods 3 For $10.00 thru 02/09
- 2 teaspoons parisian essence
- 1 cup fruit medley Whole Foods 3 For $10.00 thru 02/09
- 1/2 teaspoon nutmeg
- 1/2 teaspoon cinnamon
- 1/2 teaspoon mixed spice
- 3/4 cup self-raising flour
- 3/4 cup fresh breadcrumbs
- Custard
- 125g block PHILADELPHIA Cream Cheese, softened
- 1/4 cup icing sugar
- grated rind and juice of one orange
- 1 tablespoon brandy
- 1 cup cream
- Beat Philly* and brown sugar until smooth and fluffy, add the eggs and beat until smooth then fold in the fruit mince.
- Sift dry ingredients together (nutmeg, cinnamon, mixed spice and self raising flour) then add to Philly* mixture, then add remaining ingredients.
- Mix well.
- Spoon the mixture into greased and base lined tea cups, cover with a layer of greased foil, tie with string and steam for one hour or until puddings are cooked through.
- Serve hot with Philly* Citrus Custard.
- For the microwave:
- Dust greased cups with a combination of one tablespoon each of flour and cocoa prior to filling.
- Cover loosely with plastic wrap.
- Microwave on medium power eight minutes, give a half turn and microwave a further 6 - 8 minutes or until cooked.
- Stand five minutes before serving
