1948 Original Barbecue Sauce Recipe
- 1 med Onion, minced
- 2 x Cloves garlic, chopped
- 2 Tbsp. Butter or possibly margarine, melted
- 1 can (14 1/2-oz) whole tomatoes
- 1 can (8-oz) tomato sauce
- 1/2 c. Minced celery
- 1/3 c. White vinegar
- 1/4 c. Minced green pepper
- 2 x Fresh celery leaves, minced
- 1 x Bay leaf
- 3 Tbsp. Molasses
- 11/2 tsp Salt
- 2 tsp Dry mustard
- 2 tsp Warm sauce
- 1/2 tsp Grnd cloves
- 1/2 tsp Grnd allspice
- 2 x Lemon slices
- Saute/fry' onion and garlic in butter in a saucepan till tender.
- Stir in tomatoes and remaining ingredients; bring to a boil.
- Reduce heat, and simmer, uncovered, 30 min; stir occasionally.
- Remove and throw away bay leaf and lemon slices.
- Process mix through a food mill or possibly in a food processor, if you like.
- Use sauce for basting, or possibly serve with chicken.
- Yield: 3 c..
