Hot Saus

  1. Preheat a grill over medium-high heat.
  2. Lightly oil the grill grates.
  3. Grill the red chiles and habaneros, turning occasionally, until charred all around.
  4. Cut stems off and let cool.
  5. In the bowl of a food processor, combine the charred chiles with the vinegar, cayenne, salt, sugar, xanthan gum and 1 cup water.
  6. Blend well.
  7. Serve with anything, but beware of spiciness!
