Mama Cece's Meatballs and Sauce
- 2 tablespoons olive oil
- 2 onions, chopped (reserve 1/4 of an onion to finely mince for meatballs)
- 10 ounces carrots, shredded
- 4 garlic cloves, crushed
- 6 ounces Contadina tomato paste
- 64 ounces campbell's tomato juice
- 1 tablespoon sugar
- 1 teaspoon sugar
- 1 tablespoon butter
- 1 12 teaspoons kosher salt
- 18 teaspoon freshly ground pepper, to taste
- 14 onion, finely minced
- 4 garlic cloves, crushed
- 4 eggs, beaten
- 2 tablespoons milk
- 1 cup parmesan cheese, grated
- 12 cup breadcrumbs
- 1 12 teaspoons kosher salt
- 18 teaspoon freshly ground pepper, to taste
- 18 teaspoon allspice
- 1 lb ground chuck
- 1 lb ground turkey breast
- 2 tablespoons butter, room temperature
- SAUCE:.
- Caramelize onion in oil.
- Add carrots and saute until soft.
- Add garlic and saute for 3 minutes.
- Stir in tomato paste until well combined.
- Stir in tomato juice, sugar, butter, salt, and pepper.
- Simmer 2 to 3 hours, until sauce thickens.
- Meanwhile, make the meatballs.
- MEATBALLS:.
- Mix onions, garlic, eggs, milk, parmesan cheese, breadcrumbs, salt, pepper, and allspice until well combined.
- Break up meat and butter and mix just until combined.
- Brown meatballs in batches and drain grease on paper towels.
- Keep warm on a plate in microwave while the remaining meatballs are cooked.
