Mint Brownie Bites
- 4 oz. unsweetened chocolate
- 1 c. butter or margarine
- 3 eggs
- 1 c. granulated sugar
- 1 c. brown sugar, firmly packed
- 1 tsp. vanilla extract
- 1/4 tsp. almond extract
- 1 c. all-purpose flour
- 1/4 tsp. salt
- 3/4 c. chopped walnuts
- 2/3 c. chopped Andes chocolate mint wafer candies
- Melt the chocolate and butter in a small saucepan over low heat, stirring, until smooth (or melt in the microwave).
- Remove from heat and cool completely.
- Preheat the oven to 350u0b0.
- In a large bowl, combine sugars and eggs.
- Beat until thick and creamy. Stir in the extracts and chocolate mixture.
- Add the flour and salt, stirring until well blended.
- Stir in walnuts and chopped candy.
- Spoon into buttered mini-muffin pans.
- Fill 2/3 full. Bake for 15 or 20 minutes or until they begin to pull away from the sides.
- Cool completely before removing from the pans.
- Makes about four dozen.
