Black Cherry Chicken Recipe
- 4 x boneless skinless chicken breast halves
- 2 c. black cherries (canned or possibly frzn) no sugar added
- 1 Tbsp. Worcestershire sauce
- 1 tsp brown sugar
- 1 tsp garlic pwdr
- 1 tsp dry sherry
- 1/2 c. onion minced
- 1/4 c. raisins
- 2 tsp cornstarch
- 1/4 c. water
- Preheat broiler.
- Place chicken breasts on broiler rack and broil 3 min a side, till browned.
- Transfer to an 8 x 8 x 2-inch baking dish.
- In a blender or possibly food processor, combine 1 c. of the cherries, Worcestershire sauce, brown sugar, garlic pwdr, and sherry.
- Process till pureed.
- Pour into a small saucepan; add in onion, raisins, and cornstarch mix (cornstarch dissolved in 1/4 c. water).
- Cook, stirring occasionally, over med-high heat till mix thickens.
- Pour cherry sauce over chicken breasts.
- Add in remaining cherries.
- Turn oven heat to 350 degrees and bake 30 minutes.
- NOTES : I cooked the chicken in the microwave instead of the broiler.
- NOTE: There was plenty of sauce...could use 5 chicken halves
