Chicken Quesadilla

  1. Saute a half a small onion (I like to use a red onion) in the butter.
  2. When the onions are soft, add the chicken to the same pan.
  3. Cook for about 5 minutes or a little longer if it is still frozen.
  4. Cut into long strips and add back to the pan for an additional 5 minutes.
  5. Next add the package of chicken taco seasoning.
  6. Cook as directed.
  7. In a large skillet, lay a tortilla flat, top with cheese (I like to use a Mexican mix or a cheddar and mozzarella mix).
  8. Next put a scoop of chicken and a little more cheese.
  9. Put a tortilla on top, cook for about 1 minutes, then flip to the other side.
  10. Cut with a pizza cutter into 4 squares, then top with your favorite toppings.
  11. I use salsa, sour cream and a little cilantro and chopped lettuce.
