Chicken Quesadilla
- 1 whole Small Red Onion, Or Half A Bigger One
- 1 Tablespoon Butter
- 6 whole Chicken Tenders Or 4 Breasts Of Chicken
- 1 package (1 Oz. Package) Chicken Taco Seasoning
- 1 package Burrito-sized Flour Tortillas
- 1 package (8 Oz. Package) Shredded Cheese, I Used A Mexican Blend
- Saute a half a small onion (I like to use a red onion) in the butter.
- When the onions are soft, add the chicken to the same pan.
- Cook for about 5 minutes or a little longer if it is still frozen.
- Cut into long strips and add back to the pan for an additional 5 minutes.
- Next add the package of chicken taco seasoning.
- Cook as directed.
- In a large skillet, lay a tortilla flat, top with cheese (I like to use a Mexican mix or a cheddar and mozzarella mix).
- Next put a scoop of chicken and a little more cheese.
- Put a tortilla on top, cook for about 1 minutes, then flip to the other side.
- Cut with a pizza cutter into 4 squares, then top with your favorite toppings.
- I use salsa, sour cream and a little cilantro and chopped lettuce.
