Hoppin John Recipe
- 1 c. rice, uncooked
- 1 can black-eyed peas
- 1 med. onion, finely minced
- 1 lg. piece of celery, thinly sliced
- 1 c. cooked ham, minced
- 2 tbsp. parsley flakes
- 1 tbsp. garlic salt
- Salt and pepper to taste
- Cook rice according to package directions.
- Set aside.
- In large skillet fry celery and onion till tender.
- Add in ham, cooked rice, black-eyed peas (with juice), and seasonings.
- Stir well and simmer for 20 min.
