Mini Omelettes

  1. Preheat the oven to 180C/160C Fan/Gas 4.
  2. Using your fingers, lightly grease six holes of a muffin tray with butter.
  3. If you're using a silicone muffin tray, put it on a baking tray so it's easier to handle.
  4. Cut the ham into small pieces.
  5. Grate the cheese onto a plate.
  6. Divide the ham, cheese, chives and sweetcorn between the holes in the muffin tray.
  7. Break the eggs into a bowl, add the milk and beat until evenly mixed.
  8. Season with salt and pepper.
  9. Transfer to a jug and then carefully pour into the muffin holes.
  10. Cook in the oven for 15-20 minutes or until just set.
  11. Leave to cool for 15 minutes, then turn out.
  12. Serve with salad.
