Sweet potato hashbrowns And eggs

• 1 Sweet potato
• 2 Eggs
• 1 as needed Onion
• 1 as needed Peppers
• 1 as needed Salt & pepper

1. Oil in pan add diced sweet potato
2. Wait two minutes, then add onion and pepper
3. Wait one minute, add two eggs directly on top of sweet potato.
4. Season to taste and cover
