Diet-Friendly Soy Milk Risotto with Tofu
- 1/2 block Tofu (silken)
- 150 ml Soy milk
- 1 bowlful Hot cooked white rice
- 1/4 Onion
- 1/4 bunch Broccoli
- 2 slice Bacon
- 1 as liked Corn kernels
- 1 tsp Soup stock granules
- 1 Salt
- 1 Black pepper
- Chop the broccoli up into bite-sizes and boil until it's at the desired level of firmness.
- (You can also microwave it instead.)
- Mince the onion.
- Chop up the bacon into bite-sized pieces.
- Spread some olive oil (unlisted) in a pot.
- Saute the onion until soft.
- Also add the bacon.
- Pour the soy milk into the pot from Step 2.
- When warm, add the corn, broccoli, rice, and the tofu scooped with a spoon into an appropriate size.
- Season with soup stock granules and salt.
- Dish it up, and enjoy with a dash of black pepper.
