Pizza Bites

  1. Preheat the oven to 400 F. Lightly spray a pie pan or glass casserole dish with cooking spray.
  2. Take your can of diced tomatoes and add to a small bowl with olive oil, minced garlic cloves, dried crushed oregano, a crack or two of fresh pepper, and a couple leaves of basil chopped.
  3. Divide the pizza dough into 20-24 roughly equal-sized pieces.
  4. Take one of the dough pieces, and roll out into a small circle.
  5. Top a small dollop of diced tomatoes, a cube of cheese and a slice or two of pepperoni.
  6. Pull the edges of the dough around the fillings and pinch closed.
  7. Place seam-side down into the pan.
  8. Continue with the rest of the dough bites.
  9. Lightly brush the tops of the dough balls with olive oil and sprinkle with grated Parmesan cheese.
  10. Bake for 20 minutes, or until the tops are golden brown.
  11. Serve hot!
