Cheree's Crock Pot Potatoes
- 1 (5 lb) bag potatoes
- 1 lb bacon
- 1 large onion
- 1 cup apple cider vinegar
- 1 cube beef bouillon
- salt and pepper
- Boil potatoes until they are soft and the jackets peel off.
- Cut the potatoes up and put in a crock pot.
- Fry bacon crisply and let drain.
- Chop onion in small pieces and saute in bacon grease.
- After sauteing a few minutes, pour the apple cider vinegar and bouillon cube into the onions and simmer for a few minutes.
- Salt and pepper the potatoes.
- Pour the onion and vinegar mix over the potatoes and crumble the bacon on the top.
- Leave on low in crock pot until ready to serve.
- I normally try to let it be at least a couple of hours because I think it tastes better.
- If you cook the potatoes the night before and mix the next morning you might need to turn the crock pot up a bit to warm the potatoes up before eating.
