Sweet Potato Muffins

  1. Sift together the ingredients.
  2. Wrap the sweet potato in plastic wrap, then microwave for about 5 minutes, roughly chop up with skins, then mash.
  3. Then heat in oven at 180C.
  4. Put the butter in a bowl, stir until creamy, then add the sugar and mix until the batter turns white.
  5. Beat the eggs, then mix in a little at a time.
  6. Add the sweet potatoes and mix together.
  7. Mix in the dry ingredients and the milk, alternating with additions in 3 to 4 batches.
  8. Make sure to start and end with the dry ingredients.
  9. Fill paper cup molds 80% to the top.
  10. Bake for about 25 minutes in oven preheated to 180C.
