Sweet Potato Muffins
- 250 grams Cake flour
- 2 tsp Baking powder
- 2 tsp Cinnamon powder
- 100 grams Butter
- 80 ml Milk
- 2 Eggs
- 120 grams Sugar
- 200 grams Sweet potato
- Sift together the ingredients.
- Wrap the sweet potato in plastic wrap, then microwave for about 5 minutes, roughly chop up with skins, then mash.
- Then heat in oven at 180C.
- Put the butter in a bowl, stir until creamy, then add the sugar and mix until the batter turns white.
- Beat the eggs, then mix in a little at a time.
- Add the sweet potatoes and mix together.
- Mix in the dry ingredients and the milk, alternating with additions in 3 to 4 batches.
- Make sure to start and end with the dry ingredients.
- Fill paper cup molds 80% to the top.
- Bake for about 25 minutes in oven preheated to 180C.
