Craze-E Chicken, Black Beans & Apple Rice

  1. In a 6-quart crock-pot on high heat, add apple cider and chicken broth.
  2. Rinse chicken thighs and remove skin; place in crock-pot.
  3. Prepare apples and carrots.
  4. Drain and rinse beans.
  5. Add apples, carrots, curry powder, onion, garlic powder, and parsley.
  6. Add salt, pepper, beans, bay leaf and rice.
  7. Stir to mix ingredients.
  8. Reduce crock-pot to low heat setting and cook for 6-8 hours.
  9. Remove all chicken bones and bay leaf before serving.
  10. NOTE: Bone-in chicken thighs can be removed, deboned, shredded and added back to the crock-pot -- be sure to remove all the chicken bones before serving.
