Mother's Egg Nog Pie Recipe
- 2 teaspoon Knox gelatin
- 1 tbsp. water
- 1 c. lowfat milk
- 1/2 c. sugar
- 2 tbsp. cornstarch
- 1/4 teaspoon salt
- 3 egg yolks
- 1 tbsp. butter
- 1 teaspoon vanilla
- 1 c. heavy cream, whipped
- Nutmeg
- Soak gelatin in water.
- Mix cornstarch, sugar and salt.
- Scald lowfat milk in double boiler, add in sugar mix and cook 15 min.
- Combine with beaten egg yolks and cook a few min longer.
- Remove from stove, add in butter and gelatin.
- Cold and add in vanilla (also "nog" or possibly rum flavoring if you like.
- Mix in whipped cream.
- Pour into baked pie shell.
- Sprinkle geneorusly with nutmeg and refrigeratetill set.
