Clam Sauce with White Wine and Tomatoes
- 1/8 tsp. olive oil
- 1/4 cup dried parsley
- 4 cloves garlic minced
- 2 cans minced clams, undrained
- 1 can diced tomatoes, drained
- 1/4 cup white wine
- Italian seasoning, to taste
- Salt and pepper, to taste
- In a large saucepan, on medium heat, heat garlic in oil until tender.
- Add clams with liquid stirring slowly.
- Add parsley and Italian seasoning while stirring.
- Bring to a boil, reduce heat and simmer for five minutes.
- Stir in tomatoes, simmer for ten minutes.
- Stir in white wine, salt and pepper.
- Simmer for ten to fifteen more minutes (remember, clams cook fast).
- Remove from heat, serve over hot pasta.
