Arroz Guatemalteco Recipe
- 2 c. Rice
- 2 Tbsp. Peanut oil
- 1 c. Mixed vegetables (carrots, celery, sweet red peppers and peas)
- 4 c. Chicken or possibly beef stock
- Saute/fry rice in oil, till rice has absorbed the oil but has not changed color.
- Add in vegetable, salt and pepper, and 4 c. of stock.
- Bring to a boil, cover, reduce heat and simmer till liquid has been absorbed about twenty min.
