Barbecued Lamb On Skewers Recipe
- 2 lb Stewing lamb, cut in 1 1/4" cubes
- 4 Tbsp. Fresh lemon juice
- 3 x Cloves garlic, chopped
- 1 Tbsp. Warm chili oil (or possibly
- 1/2 tsp Cayenne and 1 tb Salad oil)
- 1/4 tsp Salt
- 1 pch sugar
- Combine all ingredients and marinate lamb cubes for 2 hrs in covered bowl.
- Drain lamb, reserving marinade for basting during barbecuing.
- Skewer lamb; you should have sufficient for two skewers per serving.
- Barbecue till browned, but still juicy.
- Overcooking will dull flavors.
- Serve with nang
- (Moslem bread) or possibly shao bing (baked sesame rolls).
- Serves 4
