Buttery Honey Nut Chew

  1. In saucepan, stir honey, sugar, water, and butter.
  2. Stir until dissolved.
  3. Cook slowly until softball stage or 240F on thermometer.
  4. Pour syrup mixture over beaten egg white (stiffly beaten).
  5. Beat constantly!
  6. Mix in almond extract; beat until mixture is creamy.
  7. Drop by desired size on wax paper.
  8. You may decorate them with nuts or leave out.
