Bean Soup With Greens
- 1 12 lbs swiss chard or 1 12 lbs beet leaves
- 6 cups chicken broth
- 1 garlic clove, crushed
- 1 cup cooked white beans
- 12 teaspoon salt
- 14 teaspoon white pepper
- grated parmesan cheese (to garnish)
- red pepper flakes (to garnish)
- Add greens to pot of boiling water and cook 7 minutes.
- Drain and squeeze well.
- Bring broth to simmer, add garlic, and greens.
- Rinse beans and add.
- Simmer partially covered 10 minutes.
- Sprinkle with salt and pepper to taste.
- Garnish as desired.
