Scallops, Shrimp And Snow Peas
- 1 lb. shrimp, peeled and deveined
- 1/2 lb. scallops
- 1/2 lb. snow peas
- 1 bunch green onions, chopped
- 1 c. chicken broth
- 2 Tbsp. soy sauce
- 1/4 tsp. ground ginger
- black pepper
- a bit of minced garlic
- 1/2 red bell pepper, chopped
- cornstarch
- dash of cayenne
- hot, cooked rice
- Saute shrimp and scallops in small batches in a wok until done (shrimp first, then scallops; scallops take a few minutes to cook).
- Set aside in dish, keeping warm.
- Put a bit more oil in wok.
- Quickly saute garlic, green onions and peppers, then add snow peas and continue sauteing.
- Saute until peas are bright green and are cooked, yet crunchy.
- Add scallops and shrimp.
- Add broth, soy sauce and spices.
- Thicken with a mixture of cornstarch and water (1/2 cup water and 1 tablespoon cornstarch).
- Cook for about 7 minutes.
- Serve over rice.
