PB & Chocolate Chip Shortbread Cookies
- 1 stick unsalted butter, at room temperature
- 1/3 cup peanut butter
- 1/2 tsp vanilla extract
- 1 1/4 all-purpose flour
- 1/4 cup granulated sugar
- 1/2 tsp salt
- 3/4 cup milk chocolate chips
- Cream the butter and the peanut butter together.
- Beat in the vanilla.
- In a separate bowl, combine flour, sugar, and salt and add to the butter mixture.
- Mix until the dough comes together and is no longer crumbly.
- Stir in the chips.
- Turn the dough out onto a piece of waxed paper.
- Gently pull the dough together and form it into a log.
- Refrigerate for at least an hour.
- Preheat oven to 350AF.
- Remove cookie batter from refrigerator and cut into 1/3 inch slices.
- Place cookies on a parchment lined baking sheet and bake for 16 minutes.
- Let the cookies cool on the pan for 5 minutes before transferring to a rack.
