Thai Style Beef
- 2 teaspoons oil
- 1 large onion, sliced into rings
- 1 clove garlic, crushed
- 2 teaspoons ground cumin
- 1 teaspoon chilli powder
- 1 teaspoon grated lemon rind Safeway 4 ct For $5.00 thru 02/09
- 500g beef rump steak, sliced finely
- 1/2 cup coconut milk
- 2 tablespoons KRAFT Crunchy Peanut Butter
- 1 tablespoon VEGEMITE
- 2 spring onions, cut into 3cm lengths
- 1/4 cup fresh coriander, chopped
- Heat oil in a wok or frying pan over a high heat and cook onion and garlic until softened.
- Add cumin, chilli and rind and cook for a further minute.
- Add beef and stir fry until browned.
- Stir in coconut milk, peanut butter, Vegemite* and spring onions and cook for a further 2-3 minutes until well combined.
- Stir in coriander and serve immediately with steamed rice.
